Penne with Asparagus, Spinach and Bacon

You all know how big of a fan I am of Fiber Gourmet's pasta per my last reviews (here and here), I can't get enough of the stuff. I'm Italian, give me a break, being on a diet doesn't mean I can give up pasta so easily, it's a staple in my life. So when I found out that I could finally find high fiber, low calorie pasta, even better than the store bought whole wheat pasta, I was flying high!

I wanted to share with you my newest favorite recipe to use my Fiber Gourmet Penne with, it's whats on our table for dinner tonight.


Penne with Asparagus, Spinach and Bacon

Serves 4

Ingredients

* 8 oz uncooked Fiber Gourmet Light Penne pasta
* 2 tbsp bacon bits (I cook up some turkey bacon and crumble it)
* 1/2 TBSP Extra Virgin Olive Oil
* 1/2 cup chopped sweet onion
* 2 1/2 cup (1 inch) slices asparagus(about 1 lb)
* 1 1/2 cup low sodium low fat chicken broth
* 4 cup baby spinach leaves
* 1/2 cup shredded Parmesan cheese
* 1/2 tsp black pepper

Instructions

1. Cook pasta according to package. Drain and keep warm.
2. Saute onion in EVOO about 1 min until tender.
3. Add asparagus and broth to pan. Bring to boil.
4. Reduce heat and simmer 5 min or until asparagus is crisp-tender.
5. Add pasta, spinach, 1/4 cheese and pepper to pan, toss well.
6. Sprinkle w/ remaining cheese and bacon bits.

The entire family loves this, and using Fiber Gourmet's Light Penne it makes it even better for you than using regular pasta. I can't wait for dinner tonight. YUM! What's on the menu for your dinner tonight?
