Kids Health Notes is giving away five (5) Jenny Craig 30 Minute Meals Cookbooks.

The cookbook is a spiral-bound collection of menus, not just recipes. Each facing page includes a full menu - entree and side/desert; shopping and kitchen staple lists; “quick meal countdown” to coordinate every dish; and of course, nutrition information.

I know this cookbook would be VERY useful in this house. I'm not a huge cook, so when it comes to fast recipes that's what I like to do.....I'm trying to eat healthier and loose weight at the same time, so this would be a great addition to our house, would it be to yours???

In honor of the contest, here's a healthy meal/recipe that can be made in 30 minutes or less.

Sweet Roasted Chicken Sandwich

Preparation time: 10 minutes
Cooking time: 12 to 15 minutes

You Will Need
6 tablespoons whole-grain mustard
4 teaspoons honey
4 skinless, boneless chicken thighs, about 3 ounces each
4 large buns, plain or whole wheat
8 small romaine lettuce leaves
2 small ripe mangoes, sliced
2 scallions, thinly sliced (optional)

Salt and fresh-ground pepper


What to Do
1. Heat the oven to 350°F. Mix the mustard and honey together and season to taste.

2. Enlarge the hollow left by the bone in each chicken thigh, cutting to open them out; press to flatten them a little. Place the thighs, smooth side up, in a lightly oiled baking dish or small roasting pan. Set aside about 2 tablespoons of the honey and mustard mixture, and spread the remainder over the top of the chicken thighs. Roast until the juices run clear when a thigh is pierced with a knife, 12 to 15 minutes.

3. Meanwhile, split open the buns and toast them. Place a lettuce leaf on the bottom half of each bun, top with the mango slices and sprinkle with the scallions, if using. Spread the reserved honey and mustard mixture over the underside of the top halves.

4. Put the roasted chicken thighs on top of the mango and scallions, then top with the remaining lettuce. Put the tops of the bun on and press the sandwiches gently together.

Serves 4


Nutritional analysis: 365 calories, 25 g protein, 9 g fat (2 g saturated fat), 49 g carbohydrate (19 g sugars), 5 g fiber
