I'm feeling much better today than I have been, so we've decided to take the girls out on this pretty fall day out to the apple orchard!
We took them a few weeks back for the Apple Butter Festival that they had out there, and the girls just loved it. The excitement from just picking a few apples off the tree was kind of funny. I didn't know that apple picking was so exciting for these girls. They've done it before, but I guess they just love it!
I made my famous apple pie that everyone loves and yet again it came out just great! For someone who can't cook or bake well, for some odd reason, I always do really well with 'apple' recipes. Everyone loves my apple pie, and I ventured into some bread making with Apple Bread this year as well, it was a HIT!!!
Here's my apple pie recipe. It's a Splenda Apple Pie, I know, I know so many people hate splenda, the original reason I made a Splenda Apple Pie was because my father is a diabetic, so the lots of apples aren't that great for him in the first place, but we had a ton and I wanted to make an apple pie that he could actually eat as well. It's a pretty easy recipe.
Splenda Apple Pie
1 c Splenda sugar substitute
1 Tbs flour
1 Tbs cinnamon
5 granny smith apples, peeled and sliced
1 golden delicious apples, peeled and sliced
1 tablespoon butter, cut up
1 (15oz)refrigerated pie crusts
Prepare piecrusts according to package directions, fit 1 piecrust into 9 inch pie plate.
Stir together Splenda, flour, cinnamon mixture.
Stir and coat apples with flour sugar mixture, pour into pie plate, dot with pieces of butter.
Place remaining pie crust on top, crimp edges and make slits in top crust or pierce evenly with a fork to allow steam to escape during baking.
Bake at 350 for 50-55 min.
I'm procrastinating getting ready, can you tell? I've not woken up to a great morning. My children just LOVE to make a mess. Remember a few days ago that great picture of the packing peanuts ALL over my living room? Well I probably could have taken another picture this morning, instead it wasn't packing peanuts this time. It was chocolate vanilla Cocoa Puffs. Lovely! We just finished cleaning up that mess and now I have to clean them up and get ready to head out the door. Hopefully we'll get enough accomplished today while we're out.
To the Apple Orchard we go!

Thanks for sharing your recipe! I have a diabetic co-worker and this would be great to make for work.
I've never tried Splenda so I don't know what everyone's objection to it is. Is it too sweet or something? Your pie looks delicious though.
